Sometimes you just need a refreshing strawberry lemonade on a hot day. But sometimes you don’t have a whole herd of friends or an event coming up. So this recipe is for those days you want to make just enough for you, maybe for today and tomorrow 🙂
Ingredients
- 1/2 cup lemon juice (approximately 2 medium lemons)
- 1/2 cup sugar
- 1/2 cup water
- 6-8 frozen strawberries
- 2 cups water
- 4-5 mint leaves
Recipe
- Squeeze lemons and collect juice
- Put sugar and 1/2 cup water in a small pot and boil just until the sugar is no longer visible. This makes a simple syrup which can be used to sweeten many other drinks if you have leftovers
- Microwave frozen strawberries for 45-55 seconds until warm
- Mash with fork until desired chunkiness
- Add the lemon juice, 2 cups water, and strawberries to a mixing bowl or pitcher
- Stir well
- Add the sugar syrup to taste
- Throw in mint leaves and ice
- Serve
Tip: If you let it sit in the fridge overnight, the lemonade pickles the strawberries and the mint infuses into the lemonade adding even more flavor!
