It’s definitely starting to feel like summer now with all the graduations and people starting summer break. I’m really looking forward to picnics and going to the beach and being out at night without a jacket. My appetite is definitely shifting too. I’ve been craving more fresh fruit and lighter foods like salad.
Shrimp Louie Salad is one of my all time favorite salads. You can find a recipe here. It has shrimp (my favorite), avocado, and eggs in a light mayonnaise sauce. It’s super refreshing and has all the things I love.
I found this article by Budget Bytes on 34 ways to use leftover spinach super helpful. It seems like I can never go through a full bag of spinach without a lot of it going bad. The huge Costco size bags are especially daunting.
This recipe for a giant mochi cake is amazing! The recipe is in Japanese but the comments section has some pretty helpful translations. Also, the video makes it look so amazing!
