Hi lovelies!
Spring is turning to summer much too quickly. I’m currently on day 20 of my 100 Days of Joy Challenge and so far it’s been great. I think it helps to remind me of what I have to be grateful for and helps to gather and organize my thoughts.
I’m really looking forward to a good three day weekend. Memorial Day always comes along with American classics like hot dogs and hamburgers. I’ve been trying to eat less red meat recently. But of course, I end up looking up more meat recipes in some silent rebellion.
I found this really educational video on how to butcher a half steer. Knowing the different cuts and preparations for every part of the cow is a really handy thing.
And then there’s this recipe for Kleftiko, a lamb dish in which lamb is slow-roasted with potatoes.
I also began listening to 32 Yolks by Eric Ripert. It’s an auto-biography of a young man on his journey to becoming a chef. I’m only on chapter 4, but so far it’s been really good. The author has a strong voice and is heartrendingly honest. I definitely recommend a listen.
